Oatmeal Brown Bread



Starting with a more traditional recipe for oatmeal brown bread, I added a bit more healthy fibre with the addition of some whole grain flour and ground flax seed.



  • 1 1/4 cups warmed milk

  • 2 Tbsp. melted butter or margarine

  • 1/3 cup molasses

  • 2 3/4 cups unbleached flour

  • 1/2 cup rye or whole wheat flour

  • 1 1/2 tsp. gluten flour

  • 1 heaping Tbsp. ground flax seed (or you can use cracked wheat)

  • 1/3 cup quick oats

  • 1 tsp. salt

  • 1/2 tsp. cinnamon

  • 1 1/2 Tbsp. white sugar (1 Tbsp. + 1 1/2 tsp.)

  • 2 1/4 tsp. quick-rise yeast



Combine all liquid ingedients, including molasses in bread machine pan. Add flours, flax, oats and cinnamon. Sprinkle the salt around inside pan, avoiding the middle. Add the sugar. Make a well in centre of dry ingredients and place yeast in the well. This recipe would likely be too large to bake in most bread machines, so use the dough setting. When dough setting is finished, punch dough down, form into loaf shape, place in a greased bread pan and cut a shallow slit lengthwise along the top of loaf. Allow to rise in warm place until doubled in size (about 1/2 hour). Bake in centre of a 350 degree oven for approx. 25 min., or until loaf sounds hollow when bottom is tapped.

Note: I usually turn my oven on at 150 degrees after putting the bread into the bread machine. After 150 degrees is reached I turn the oven off. By the time the dough setting is done the oven has cooled to a perfect temperature for the second raising. I cover the dough loaf with a clean tea towel, put it in the oven and close the oven door. When it is nearly done rising I remove the bread pan and place it on the kitchen counter while the oven preheats to 350 degrees for baking. It's important to be very slow and careful when moving already risen dough so as not to cause it to fall in or deflate.
