 Eggs Benedict



  • 4 thin slices black forest ham

  • 1 tsp. white vinegar

  • 4 large eggs

  • 2 plain English muffins

  • Hollandaise Sauce

  • paprika for garnish



Warm the ham slices on a parchment paper lined baking sheet for 5 minutes at 350 degrees F.

Meanwhile, fill a wide, shallow saucepan or deep skillet 2/3 full with water and bring to a boil. Add vinegar and reduce heat until water is just simmering. Break 1 egg into a small prep bowl. While gently stirring water in the pot so that it is swirling, quickly pour in egg. Poach egg 4 minutes and lift from water with a slotted spoon. Place egg on a paper towel lined plate. Repeat with remaining 3 eggs.

Toast muffin halves lightly. Top each with a slice of ham, a poached egg, and 1 Tbsp. hollandaise sauce. Garnish with a sprinkle of paprika.
