Green Tomato Chow-Chow
- 5 pounds green tomatoes
- 3 pounds yellow onions
- 1/2 cup coarse pickling salt
- 1 and 1/2 pounds white sugar
- 1/2 pound brown sugar
- 2 Tbsp. prepared pickling spice
- white vinegar
Thickly slice tomatoes and onions, then cut slices in half. Place in a large bowl and cover with brine made from water and the salt called for.
Allow to soak for 6 hours in the brine. Drain and rinse well.
Place tomatoes and onions in a large preserving kettle. Pour in vinegar almost to the top, but do not cover.
Tie pickling spices in cheesecloth to create a spice bag. Add spice bag and sugars to the kettle. Bring to a boil, stirring occasionally.
Continue cooking until tomatoes and onions are softened. Discard spice bag. Ladle chow-chow into sterilized canning jars and process in a boiling
water bath for 20 min.
