Balsamic Fig Sauce For Pork



Balsamic Fig Sauce



  • 2 cups homemade or low-salt chicken broth

  • 6 Tbsp. balsamic vinegar

  • 1/2 cup finely chopped dried figs

  • 3 Tbsp. honey

  • 2 tsp. chopped fresh thyme

  • 1/4 cup unsalted butter, cut into small pieces

  • coarse salt and freshly ground black pepper



Add the chicken broth and balsamic vinegar to a saucepan. Bring to a boil on medium heat and continue boiling, stirring occasionally until the broth is reduced to about 1 cup. Stir in the figs, honey, and thyme and cook until the sauce is reduced by another 1 to 2 Tbsp. Add the butter and stir it into the sauce until it’s completely melted. Season with salt and pepper to taste. When done you should have approx. 1 and 1/8 cups of sauce. Drizzle the warm sauce over pork before serving.

NOTE: This sauce is fantastic drizzled over slices of roasted or barbequed pork tenderloin. It is better when made with a very good quality balsamic vinegar. Look for balsamic vinegars imported from Modena, Italy. There are some excellent imported balsamics that are very reasonably priced, so it needn't be expensive to be of good quality.
